Rotisserie Chicken Chimichangas

One of my favorite Mexican dishes to eat is chicken chimichangas. I have had them several places, including Margaritas, and I’ve wanted to make them on my own ever since. Last night, I finally did. I tweaked the recipe I found on Pinterest a little bit to fit my family’s likes. We definitely like our dishes a bit spicier.

If you love rotisserie chicken, you’ll love chimichangas made with it. The ones I made last night were delicious. In fact, my boyfriend said they are just as good as any he’s at a restaurant. And he said the best part was, we were able to eat them in the comfort of our own home. I will definitely be making these again in the not so distant future.

Rotisserie Chicken Chimichangas

Rotisserie Chicken Chimichangas

Ingredients:

  • 1 rotisserie chicken
  • 1 can of chopped green chile
  • 2 tbsp. of Hot Mexican Style Chili Powder
  • 1 clove of minced garlic
  • 1/2 cup of finely chopped onion
  • 1 pkg. of small flour tortillas
  • Canola oil
  • 1 1/2 cups of shredded Monterey Jack Cheese
  • 3 tbsp. Margarine
  • 2 tbsp. of flour
  • 1 1/2 cups of milk
  • 1/2 cup of water
  • Toothpicks
  • Salt to taste
  • Pepper to taste

Directions:

1- Remove chicken from bone and shred.

2- Add diced onions, garlic and butter to frying pan and saute until the onions are soft.

3- Once onions are soft, add the can of green chilis, shredded chicken and chili powder. Stir together.

4- Allow mixture to cook on medium for approximately 30 minutes.

5- Warm tortillas in the microwave. Add 1/4 cup of mixture to the center of each tortilla.

6- Fold sides of tortilla and secure with two toothpicks.

7- Add canola oil to frying pan. Heat until the oil is hot but not to the point it’s smoking. Add chimichangas to oil one at a time and fry until they are golden brown. Make sure to flip.

8- Place chimichangas on paper towel to drain excess oil.

Sauce Directions:

1- Add butter to small sauce pan.

2- Add flour and mix together to create a roux. Make sure the roux is smooth and well-blended.

3- Slowly stir in milk and to blended. Add in salt and pepper to taste. Continue stirring until mixture thickens.

4- Add cheese and mix together until cheese is completely melted.
